-Basically I would use English as an instruction language.
It is impossible for you to teach a new beginner.totally in Chinese.
-secondly about higher level Chinese students in this case.mostly I would use Chinese because it is very important for them to get immersed in Chinese environment.
-Lastly about those native speaking another Chinese language, for example.i will talk in mandarin all the time.i will use pictures videos and ppt. No need to worry about their ability to understand your word.
