About Mei
As a dedicated Nutrition and Health Specialist with a degree in Exercise Physiology and Nutrition from the University of Houston–Clear Lake (UHCL), I bring both academic knowledge and real-life passion to my teaching practice. My commitment to promoting healthy living stems from a lifelong interest in fitness, nutrition, and overall well-being, interest that has grown into a fulfilling career focused on educating and empowering others to make informed lifestyle choices. I strive to make complex health and nutrition concepts accessible and engaging for my students, regardless of their background or experience. My goal is to foster lasting, positive change by inspiring a deeper understanding of how nutrition, exercise, and daily habits affect long-term health. Outside the classroom, I am an active individual who values time with family, enjoys working out, and has a deep appreciation for food, not just as fuel, but as a source of joy and connection. As a mother, I’ve found joy (and challenges!) in developing nutritious, creative meals for my one-year-old daughter. This personal experience has sharpened my creativity and further deepened my empathy for those navigating nutrition in the context of real-life demands. Through my work, I hope to continue inspiring others to live healthier, more balanced lives. One lesson, one meal, and one meaningful choice at a time.

As a nutrition and health specialist, my teaching is personalized, evidence-based and focuses on long-term wellness. I strongly believe in holistic health approach: good nutrition goes hand-in-hand with other aspects of well-being, including physical activity, stress management and sleep. These factors all work together to support optimal health. Being encouraging and non-judgmental is another important approach. Creating a supportive environment where students feel safe to ask questions, explore new ideas, and make gradual and sustainable changes. My goal is to build their self-efficacy and help them form a positive relationship with food and their body.
